Have you ever tried to make healthy pancakes for your kids and they just don’t work out? Or nobody likes them? It’s taken me years but I think I finally figured out a bombproof recipe that is gluten-free, dairy free and full of flavor your kids will love!
Ingredients
3 mature, very ripe plantains
6 duck eggs (duck eggs make baking more light and fluffy but chicken eggs will work too)
3/4 cup unsweetened coconut shreds
1 cup unsweetened coconut milk
4 tbsp coconut oil, plus coconut oil to add to frying pan with pancakes
3 tsp baking powder
2 tsp vanilla
1/2 cup coconut sugar
1/2 tsp salt
Instructions
1. Add ripe plantains to blender or food processor. Add eggs. Blend until well blended.
2. Add vanilla, coconut shreds, coconut milk, coconut oil, baking powder, sea salt, and coconut sugar. Blend well.
3. Add coconut oil to frying pan, I use an electric skillet. Cook pancakes in coconut oil until lightly brown.
