Holiday Cookies!

My kids love them, I love them, I hope you will too!


1 1/4 cups spelt flour (can use gluten free flour)

1/4 cup organic unsweetened cacao powder

1/2 tsp salt

1/2 baking soda

1.5 cups semisweet chocolate chips, divide in half and melt half to stir into cookies

1/2 cup (1 stick butter) softened. Can replace with plant based butter substitute or pumpkin puree or banana mash

1/2 cup monk fruit extract

1/4 cup coconut sugar

1 free range egg

2 tbsp milk (can use oat or almond milk, I use oat)

1 tsp vanilla


Preheat oven to 350F. Grease cookie sheets. Combine flour, cocoa, salt, and baking soda in bowl.

Beat butter, sugar until light and fluffy then slowly add melted chocolate, egg, milk, vanilla. Add dry ingredient mix until blended. Stir in remaining chocolate chips and drop dough onto cookie sheets.

Bake for 10-12 minutes then remove and cool.
